Sautéed Zucchini with Mint, Basil, and Pine Nuts
1 lb zucchini
3 tbsp olive oil
3 cloves of garlic, chopped
10 mint leaves, chopped
5 basil leaves, chopped
1 tbsp (heaping) capers, rinsed
2 tbsp pine nuts, lightly toasted
1-2 tsp red wine vinegar
Sea salt and pepper to taste
Extra mint and basil leaves for garnish
Slice zucchini into 1/2 in thick rounds
Sautee zucchini in pan over medium high heat until golden brown.
Combine garlic, herbs, capers, and toasted pine nuts.
In a bowl, toss together zucchini, garlic mixture, and vinegar. Salt and pepper to taste.
